Recipe Ingredients

  1. Perfectly Boiled two cups of dry kidney or red beans
  2.  Two Cups of coconut milk
  3. Two tablespoon of sugar to taste
  4. Few Cardamom seeds
  5. ¼-teaspoon ground cinnamon
  6. ¼ teaspoon ground cumin
  7. 1 teaspoon of salt
  8. 1 teaspoon Royco
  9. Two onions chopped
  10. Two tomatoes chopped
  11. One or Two cloves of garlic, crushed and chopped
  12. 1-teaspoon curry powder
  13. Oil to fry
  14. Parsley or Coriander to Garnish
  15. 1 teaspoon curry powder
  16. ¼ teaspoon turmeric
  17. ½ cup chopped fresh cilantro
  18. 2 teaspoons honey
  19. ¼ teaspoon white pepper

Recipe Instructions

  1. In a large soup pot, heat olive oil and saute onion and bell pepper until just tender.
  2. Stir in kidney beans, coconut milk.
  3. Add the tomatoes while stirring frequently. Allow the tomatoes to cook down for about (3minutes).
  4. Add garlic, cumin, cardamom, curry and turmeric. Boil, reduce the heat and simmer frequently for 10-15 minutes until flavours blend.
  5. Stir in cilantro and honey and season with salt and white pepper. Ensure that you stir gently so as not to break the beans.
  6. Cover and allow to simmer for 25-30 minutes if not using a pressure cooker.
