Recipe Ingredients

  • 2 large eggs
  • Salt and freshly ground black pepper
  • 1 teaspoon olive oil
  • 3 cups baby spinach
  • 2 onions
  • 1 clove garlic (minced)
  • 5 plum onions

Recipe Instructions

  1. Heat the vegetable oil till hot and stir. Fry chopped onions and pepper for 1 minute.
  2. Add chopped tomatoes, salt, curry powder and fry for 3 minutes while stirring occasionally.
  3. Whisk the eggs and pour the mixture into the cooking mixture. Leave for 3 minutes while stirring occasionally.
  4. Add the chopped spinach leaves and stir. Leave the mixture to simmer for 3 minutes.
  5. Withdraw mixture from the heat and serve the egg sauce with either ugali, rice or potatoes.
