Recipe Ingredients

3 Cups of cooked Githeri

1 cup of green vegetables (mix of kale and spinach or pumpkin leaves)

Salt to taste

14 medium potatoes

Recipe instructions

  1. Put potatoes in a cooking pot and add the vegetables. Cook the potatoes whole.
  2. Add the cooked githeri
  3. Pour enough water to cover the ingredients
  4. Cover the pot and simmer the mixture in medium heat. Leave it to cook until all the water has dried. Insert a cooking stick to reach the bottom to check if the water has dried.
  5. Mash the mixture to mix the ingredients together. Do not use a potato grinder because it will break up the maize kernel. Add salt to taste.
  6. The mukimo is best served when hot with the stew of your choice.

Mukimo in Kenya is made in various ways according to the region and community that a person comes from. Mukimo is a kikuyu word which means mash or mashed. Making mukimo involves cooking different ingredients then mashing them together. The basic ingredients that have to be there are potatoes and vegetables.

People may use spinach or pumpkin leaves to make the tasty dish. Mukimo is mostly served in Mt. Kenyan communities. A person can add margarine or curry to add taste.
