As we count down to the long weekend, here’s a simple recipe for delicious slow roast goat meat.

Goat meat is meant to be soft and tender. When roasted, it may lose the moisture and toughen up, that is why this recipe is such a great idea. The secret is in the amount of heat you cook it on and what you use for marinating.

Goat meat roasted on slow heat has enough time to let all the spices sink in. So as not to lose the taste of the meat, it’s better to keep the marinating to a minimum with garlic and rosemary as your main sources of flavor.

This is what you need:


1 leg of goat
4 tablespoons of finely chopped garlic
4 sprigs of rosemary
1 teaspoon salt
½ cup olive oil
1 onion, finely chopped
½ bottle white wine
4-6 medium potatoes, cut in quarters


  1. Preheat the oven to 200°C
  2. In a pan brown the onions lightly with some of the olive oil.
  3. Mix the remainder of the olive oil, salt and garlic and onto goat meat.
  4. Place the meat into a deep oven dish with the browned onions and rosemary sprigs.
  5. Add the white wine, quartered potatoes and cover the dish with foil.
  6. Place in the oven and leave for 1½ hours.  Remove the foil after 1½ hours and leave the meat in the oven for approximate another 30 min, or until nice and brown.
