Steak & Bacon Chili
Serves 4 | Prep time: 15 minutes | Cook time: 2 hours

Ingredients :
- 6 slices bacon, chopped
- 2 pounds chuck steak, cut into 1/2-inch cubes
- Salt and pepper, to taste
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 2 jalapeno peppers, minced
- 2 Tbsp chili powder
- 1 Tbsp dried oregano
- 1 Tbsp ground cumin
- 1/8 tsp cayenne pepper
- 1 (14.5-ounce) can diced tomatoes
- 2 Tbsp water
- 1 Tbsp tomato paste
- Bacon bits (optional)
- Diced avocado (optional)
- Shredded cheese (optional)
Directions :
- In a medium-sized Dutch oven or stockpot over medium heat, saute the bacon until crisp, about 5 minutes. Transfer to a paper towellined plate, leaving the bacon grease in the pot, and set aside.
- Season the steak with salt and pepper and add it to the pot. Cook until nicely browned, 5 to 10 minutes, then transfer to a bowl. If your pot is not very wide, you may need to work in batches.
- Add the onions, garlic, and jalapenos to the pot and saute until tender, about 5 minutes. Stir in the chili powder, oregano, cumin, and cayenne and cook until fragrant, about 1 minute.
- Add the steak back into the pot. Stir in the tomatoes with their juices, water, and tomato paste. Bring to a boil, then reduce the heat to a simmer. Cover and cook until the steak is tender, 1 to 1 12 hours. Adjust the seasonings to taste.
- Serve with the bacon bits sprinkled over the top, along with diced avocado and shredded cheese, if desired.
Per serving: 484 calories, 34.6 g fat, 6.5 g carbs, 1.3 g fiber, 33.2 g protein.
