  1. Place the peas and potatoes in a large saucepan and add water to cover. Stir in the salt and place over medium flame. Bring to a boil, then reduce heat and simmer until potatoes are cooked through. Drain, reserving the liquid. The potatoes should feel tender and not mush.
  2. Add the cooked corn and ½ cup of water and let cook for 3 minutes.
  3. Add peas and salt pepper and let cook for 2 minutes.
  4. Mash the potatoes, peas and maize together with a potato masher or wooden cooking stick.
  5. Let the irio rest for few minutes before serving. Shape the irio to a regular shape such as a circle or rectangle in order to look presentable.

About Irio

Irio was originally a delicacy that was prepared by the Kikuyu community. It has now become popular all over Kenya. There are different variations of irio but the basic ingredients that have to be present are: potatoes and peas together with maize. Irio is frequently complemented with grilled steak known as Nyama na Irio
